Boozy, Easy, Excellent
- 2 cups soft butter
- 4 cups confectioners sugar
- 2 teaspoons vanilla extract
- 2 pods of Cask and Kettle Irish Coffee
Whip the butter first for 2 minutes, then slowly add the sugar while whipping. Add the vanilla and the Irish Coffee pods. Mix for 2-4 minutes, until smooth and fluffy. This should make enough for 2 dozen cupcakes, depending on how heavy you frost.
